At the Wellesley Resort, the experience of making positive environmental changes to the way we do business has been a good one.
Water
Fiji has a rainfall that is purified by equatorial winds after travelling thousands of miles across the Pacific Ocean and being a tropical country you can be sure of a brief downpour every few days. By engineering an effective catchment and storage system which doesn’t waste a drop of rain, the heavens now provide almost entirely for the Resorts water needs.
This means Wellesley guests get to swim and bath in pure Fijian rain water and any ecological impact that could be caused by alternative water supply methods is avoided.
Organic Market Garden
During the re development of the resort in 2005 it was amazing to see how fast the landscaped planting took hold and how such a vibrant array of plants came to healthy bloom so quickly.
Inspired by this experience the Wellesley Resort planted its own organic market garden fully stocked with an enormous array of vegetables, herbs and spices.
Visit the garden today and you can’t miss the rows of lettuce, the bright reds of the tomatoes and chillies or the wonderful intertwined perfume of Rosemary, mint, thyme, sage and the many other herbs and spices planted there.
It is not uncommon for guests to see the Wellesley chefs wandering back to the kitchen, baskets laden with wonderfully ripe, freshly picked produce destined for that evenings dinner plates.
The resort is now virtually self sufficient in vegetables and no longer needs the vegetable trucks and their plumes of diesel exhaust to make deliveries, which is kinder to the environment and has the added bonus of providing guests with the freshest of organic produce.
Plantation Fruit
The Resort is developing a truly impressive range of fruits and nuts grown on the property including; Banana, pineapple, mango, passionfruit, papaya, pawpaw, coconut, orange, lime, lemon, water melon, and rock melon.
Guests reap the benefit with this fresh fruit featuring throughout the stylish European centric menu, most noticeably at breakfast.
It also guarantees endless chilled fruit smoothies and when the sun touches the yard arm the juices mix well with something stronger to create wonderful tropical cocktails to help ease you into the rhythm of the Fijian night.
Fishing
In another huge stride towards sustainability we have added two new staff to their team. In amongst the standard hotel job descriptions like chamber maid and porter you now will find fisherman.
The two staff fishermen keep the menu full of all the best bounty that the Wellesley lagoon and the Pacific Ocean has to offer.
There is nothing better tasting than fish caught that day whether they are the smaller reef dwellers like Snapper or the deep water favourites like Tuna and Walu.
And they only catch what they need so nothing goes to waste.
Energy
In the next stage of environmental initiatives the Wellesley Resort is focusing on alternative energy sources for its power needs and has some truly innovative solutions under development.
Rates are in Fijian dollars and are valid from 1st April 2007 until 31st March 2010.
Rates quoted are per room, per night and do not include 12.5% VAT and the 5% bed tax.
